Propuesta de mejora del Modelo de Azuara: Aplicación en la cinética de transferencia de masa durante la deshidratación osmótica de anchoveta (Engraulis ringens) y su optimización

Resumen

El objetivo de esta investigación fue proponer una mejora al Modelo de Azuara y compararlo con otros modelos en la predicción de la cinética de transferencia de masa en la deshidratación osmótica (DO) de trozos de Anchoveta (Engraulis ringens), utilizando como agente deshidratante cloruro de sodio (NaCl) y un delineamiento compuesto central rotacional (DCCR) de 4 variables-independientes. Se utilizaron los modelos matemáticos de Crank, Azuara y un modelo polinómico alternativo. Este último predijo la ganancia de NaCl al 93,6% y pérdida de humedad al 90,4% respectivamente, permitiendo optimizar la osmodeshidratación de: 5 a 7 °C de la solución, 3,0 a 3,5 la relación solución-producto, 14% a 16% la concentración de NaCl en la solución, y de 200 y 250 min la inmersión, para obtener concentraciones entre 5,94% y 6,46% de NaCl y humedades entre 68,76% y 67,52%. La difusividad efectiva fue de 2,63x10-10 m2/s para el NaCl y de 4,35x10-10 m2/s para la pérdida de humedad. El modelo de Azuara mejorado logra mejorar el nivel predictivo con una ganancia de NaCl (R2: 94,2%), y reducir el contenido de humedad final (R2: 72,4%), por lo tanto, aplicar este modelo es eficiente para predecir la cinética de transferencia de masa en la deshidratación osmótica.
