Optimización del proceso de extracción del mucílago de Linum usitatissimum utilizando un diseño secuencial

El objetivo de este estudio fue optimizar el rendimiento de polisacáridos y proteína, viscosidad de gel y propiedades texturales del mucílago de Linum usitatissimum utilizando un diseño secuencial. Los factores de estudio fueron el método de extracción (sin agitación, con agitación magnética y con ultrasonido), la temperatura (40, 55, 70 °C), tiempo de extracción (1, 2 y 3 h), pH (5,5, 7,0 y 8,5) y relación semilla:agua (1:10, 1:20 y 1:30 g/L). En la primera etapa, se utilizó un diseño de screening que permitió determinar que la temperatura (°C) y tiempo (h) de extracción fueron los factores que tienen efecto significativo sobre el proceso. Se evidenció que el método de extracción no tiene efecto significativo sobre el rendimiento y porcentaje de proteínas. En la segunda etapa, utilizando un diseño completo, se logró determinar que las condiciones óptimas de extracción del mucílago fueron: 85 a 90 °C; 4,5 a 5,0 h; pH 7,0 y relación semilla:agua de 1:20, éstas condiciones optimizan el rendimiento (9,73%), el porcentaje de proteínas (12,5%) y proporcionan un gel con una viscosidad de 1110,90 mPa.s y 159,97 g de firmeza, 568,48 g.s de consistencia, 29,52 g de cohesividad e 14,48 g.s de índice de viscosidad.
