Resumen

La toxicidad que tienen los microorganismos como las aflatoxinas que se encuentran en diversas variedades de los alimentos que actualmente son muy consumidos en Perú como en el mundo. Muchos de los alimentos contaminados con aflatoxinas son causantes de enfermedades, una de las principales es la carcinogenicidad. Este estudio tuvo como objetivo evaluar efecto de la concentración ozono/aire y UV en la remediación de aflatoxinas en diferentes cereales o granos de consumo humano. Este estudio revisa la manera en la que se puede desarrollar un nuevo reactor en la cual degrade y desintoxique en una mayor cantidad de aflatoxinas, sin embargo, muchos estudios han verificado que los efectos nocivos de AFB1 se puede reducir en gran medida mediante la irradiación UV en el reactor de fotodegradación y el reactor se puede aplicar a gran escala en la desintoxicación de AFB1 en muchos cereales, así como también en aguas residuales. Por lo tanto, ha tenido un crecimiento en el desarrollo de nuevos reactores del tipo biopelículas y cerrado para reducir la cantidad de esta toxina en los alimentos. La creación de nuevos biorreactores como el de lecho fluidizado resulta muy prometedor para la descontaminación de aflatoxinas en cereales y serían menos peligrosos para los consumidores.
