EFECTO DE LA VARIACIÓN TÉRMICA DEL ESCALDADO SOBRE LA ACTIVIDAD DE LA PEROXIDASA EN TUBÉRCULOS DE Solanum tuberosum

Resumen

En Perú, el uso  común y masificado de Solanum tuberosum ha llevado a utilizar técnicas industriales eficientes, como el escaldado, que es un tipo de pasteurización empleado en frutas, tubérculos  y hortalizas con el fin de inactivar sus enzimas en relación al efecto térmico y tiempo de conservación, evitando el pardeamiento enzimático y proporcionando cambios estructurales al producto que mejoran su calidad textural y comercial; el objetivo de la experiencia  fue determinar el efecto de la variación térmica del escaldado sobre la actividad de la peroxidasa en tubérculos de S.  tuberosum; además de analizar la actividad enzimática residual después del  escaldado en las diferentes condiciones de tiempo y temperatura y comparar las actividades enzimáticas residuales mediante el análisis estadístico. El material biológico fue tubérculos de papa , adquiridos en el mercado “La Hermelinda” Trujillo;  el trabajo experimental se realizó en el laboratorio de Tecnología Enzimática y Productos Naturales, Universidad Nacional de Trujillo. Los trozos de tubérculos fueron sometidos a escaldado por 80o, 85o, 90o y 95 °C a diferentes tiempos,  luego fueron enfriados 5 °C. La actividad de peroxidasa fue medida espectrofotométricamente a 470 nm usando guayacol y peróxido de hidrogeno. Sé encontró que la temperatura de 90°C permite un escaldado con una inactivación de la POD hasta los 20 días de conservación a 5°C.

ABSTRACT

In Peru, common and crowded Solanum tuberosum use has led to efficient use industrial techniques like blanching, which is a type generally used pasteurization in fruits, tubers and vegetables in order to inactivate the enzymes relating to the thermal effect and shelf life, avoiding the enzymatic browning and providing structural changes to improve product texture and quality commercial application; The objective of the research was to determine the effect of temperature variation of blanching on peroxidase activity in tubers of Solanum tuberosum; analyze the residual enzyme activity after blanching in different conditions of time and temperature and comparing the residual enzyme activities by statistical analysis. The biological material was tubers of Solanum tuberosum, acquired in the market, "the Hermelinda" Trujillo, the experimental work was carried out in the laboratory of enzyme Technology and Natural Products, National University of Trujillo. Tuber pieces were subjected been scalded by 80, 85, 90 and 95 ° C 1 ': 20''. They were then quickly cooled 5 ° C. Peroxidase activity was spectrophotometrically at 470 nm using guaiacol as and hydrogen peroxide. It was found that the temperature of 90 ° C allows blanching POD inactivation of up to 20 days storage at 5 ° C. Data were subjected to Anova and Tukey tests.
